We will be offering two seatings on New Years Eve, 5pm and 7:30pm.

$65 per person

Seared diver scallops
Smoked winter squash puree, mushrooms, crispy potato

Red wine braised escargot
Spaetzle, brussel sprouts, duck skin crumb, rosemary oil

Entree:

 NY striploin & short rib
Parsnip puree, pommes anna, green peppercorn jus

or

Arctic char & dungeness crab
Cauliflower, chickpea panisse, tarragon emulsion

Dessert:

Whipped Mt. Lehman goat cheese mousse
Green apple sorbet, walnut tuile, champagne foam, carbonated sugar

Chocolate & blood orange
Dark Chocolate truffle, blood orange bavarois, salted caramel, blood orange gel

7:30pm seating

Pickled Keremeos peach chip, micro arugula, smoked oil

Bourbon infused foie gras torchon
Walnut maple confiture, 1 year prosciutto, brioche blini

Dungeness crab salad
White asparagus, duck yolk gribiche, confit tomato, tarragon oil

Intermezzo:

Mushroom consomme
Thyme infused ricotta, puffed grains

Entree:

Venison striploin & short rib
Celeriac pave, carrot puree, beets, dijon rosemary jus

White sturgeon & diver scallop
Hazelnut & sunchoke puree, pickled apple, crispy potato, smoked butter sabayon
