Peppermint Ammonia Cookies
This old fashioned peppermint cookie uses baker’s ammonia for the leavening.
¼ cup softened butter
1 ¼ cups sugar
2 whole eggs
¼ cup grapeseed oil
1 cups sour cream
¼ tsp. peppermint oil
1 Tbsp. baking ammonia dissolved in 1 Tbsp. hot water
½ Tbsp. baking powder
½ tsp. baking soda
4 cups flourIn large mixing bowl, beat butter &sugar, then beat in the eggs one at a time.
Dissolve baking ammonia in hot water, stirring to ensure there are no lumps.
Add the oil, sour cream, peppermint oil and baking ammonia to the butter mixture, beating well.
In separate bowl mix dry ingredients and add to wet ingredients, stirring with wooden spoon or using a hook attachment on your large mixer.
Cover and refrigerate overnight.
Divide dough into four pieces and roll out to about ¼” thickness, using a light dusting of flour on rolling surface & on top of the dough.
Cut with small (traditionally round) cookie cutter and bake at 400 F for 10 – 12 minutes or until golden. Remove onto wire cooling racks. One batch makes about 4 dozen cookies, depending on the size.
