Submitted. The team at Restaurant 62 is pleased to announce that Matthew Nichols has been promoted to the position of Chef de Cuisine and co-owner, joining the ranks with fellow co-owner Chef Jeff Massey.

Chef Matthew Nichols was born to cook. Born and raised in B.C., he developed a passion for great food at a young age and overcame adversity to become the talented chef and co-owner of Restaurant 62 that he is today.
When Matthew was just 8 years old he was diagnosed with arthritis in most of his joints and was told by doctors that as an adult he would probably need to pursue a career that would be easy on his joints. So Matthew pursued many different avenues to find that career but his interest in the culinary arts prevailed.
While studying in the accounting program at Kwantlen Polytechnic University, Matthew was working part time at Central City Brewing in Surrey. He started out where many chefs do, in the dish area and soon became one of the CCBC leaders. During his tenure at Central City Brewing, Matthew was exposed to a wealth of knowledge and skills where he continuously exceeded expectations by delivering much more than the average brew pub dining experience.
In 2012, Matthew entered the Culinary Arts program at Vancouver Community College and then, just 16 months later, he received his Red Seal certification in cooking. While he was finishing his certification, Matthew got the chance to join the Restaurant 62 team. It was there, under the leadership of Executive Chef Jeff Massey, that his talent flourished. At Restaurant 62, he was given the creative freedom to develop unique new menu items and contribute to the restaurant’s popular refined farm-to-table dining experience. Within a few months, Matthew was promoted to Sous Chef and then later he became Chef de Cuisine. In 2016, when Matthew was given the opportunity to become a co-owner of Restaurant 62, he jumped at the chance to make his mark on the culinary scene.
